Lace for Brunch? Crispy Parmesan Lace with Sage and Pine Nuts top a Baby Kale Salad

Sweet or savory? I can never decide when it comes to brunch… I wish brunch was served tapas style … A few bites of eggs, a few bites of a waffle, a few  bites of fruitand yogurt.  All the bliss of different tastes without the overstuffed piggy feeling after!  Additionally, since I always have a tough time making a decision on what to order at most restaurants, I really don’t have to decide because I can try almost everything.  Score!pic1ullSizeRenderpic2

Anyways, I decided to do a lighter take on a savory brunch dish: Baby kale salad with crispy parmesan lace with sage and pine nuts.. serve with a piece of grilled chicken and voila!!! The parmesan crisps are cinch to make with the OXO good grips hand box grater.  Quite honestly, what’s great above the crisps is that they look elegant but are simple to make.

Crispy Parmesan Lace with Sage and Pine Nuts top a Baby Kale Salad

Prep Time: 10 minutes

Cook Time: 6 minutes

Crispy Parmesan Lace with Sage and Pine Nuts top a Baby Kale Salad

Ingredients

  • 5 oz parmesan cheese
  • 2 tbs chopped sage
  • 1/4 cup of pine nuts
  • Dash of cracked black pepper

Instructions

  1. Heat over to 350 degrees.
  2. Using the OXO Good Grips box grater on the small grate side, shave parmesan cheese.
  3. Separate into even clumps on a cookie sheet line with parchment paper.
  4. Sprinkle evenly sage and pine nuts. Finish with black pepper.
  5. Bake in oven for 6 minutes until golden.
  6. Remove from oven and let cool for 2 minutes and they are ready to eat.
