Presto Pesto!

I decided to grow my own herb garden.  I have had “light” success with this in the past but given the heat of Dallas weather, I was unsure if the herbs could handle the outdoors.  So I decided to try an indoor garden… I did some extensive research on grow lights thanks to Amazon and for the past few weeks, I have been growing healthy herbs indoors.  (I did however take the feedback from a friend to delete my browsing history in case Big Brother thought I was trying to grow an herb of the other variety.)   I probably also need to invite my neighbors over at some point since that glowing light coming from my kitchen 12 hours a day good be suspicious.

Anyways, with my abundance of fresh basil, I decided to make a twist on pesto with my Cuisinart SmartStick® Hand Blender.  The pesto was super easy to make…all I had to was put all the ingredients in a mason jar and whirl up.  Since I didn’t have pinenuts, I used toasted pumpkin seeds.  I also decided to add arugula for an added peppery bite.  To keep it healthy, I added the pesto to sautéed zucchini noodles, and it turned out be a great dinner!  Enjoy!

Arugula Basil Pesto

Arugula Basil Pesto


  • 2 tbs toasted pumpkin seeds
  • 1/3 of olive oil
  • 3 oz of parmesan cheese
  • handful of fresh basil
  • handful of fresh arugula
  • 1 clove of garlic
  • squeeze of 1 lemon
  • dash of salt
  • dash of pepper


  1. Place all ingredients in a mason jar.
  2. Start the Immersion blender on low for 10 seconds and then move to high speed for 30 seconds.
  3. Depending on the thickness of the pesto, loosen with 1-2 tbs of water.
  4. Can be stored in the mason jar for about 2 days.
