I can relate to most people, but vegans… I really struggle with.  I love cheese!  I love steak!  Honestly, I tried going even just vegetarian a while back and lasted about 3 meals.  My vegan friend has survived (as I like to say) 3 years and eats pasta with red sauce and kale salad everyday.  How boring.

Anyways, for this Christmas, and speaking of vegan,  I get the pleasure of cooking Christmas dinner for my extended family of 20 or so people.  In that group contains a vegan, a nut allergy, two non seafood eaters, a picky vegetarian, a handful of foodies, and three children under the age of 7. I think this has to be the Rubix cubes of menus.  I’ve come to realize that no one will be happy with the menu but as long as there are at least two things they can eat, I consider that a win.  Anyways, to help relieve the stress of the day, I have been experimenting with recipes that are make ahead and still delicious!

I love a quick appetizer, and I have been playing around with maple bacon ingredients.  I decided to create a maple bacon goat cheese ball to serve with crackers the day of Christmas.  I thought this would be good enough for the foodies, the non seafood eaters, and maybe the kids.  The others will just have to snack on a vegetable tray 🙂

To create this, all you need to do is blend together the cream cheese and goat cheese.  Then mix in some fresh herbs and maple syrup.  To make the pretty ball shape, use a rubber spatula to create a ball shape and load into some saran wrap to cover and shape.

In a matter of minutes, you can create this delectable cheese ball for all those not-so-picky Christmas guests!  I hope you enjoy!

Cheese Please

Ingredients

  • 8 oz of cream cheese, soft to almost room temperature
  • 4 oz of goat cheese
  • 1 tbs of maple syrup
  • 1 tbs of chopped chives
  • 1/4 cup of chopped parsley
  • 3 tbs of of chopped toasted pecans
  • 3 slices of bacon chopped
  • pinch of salt
  • pinch of pepper

Instructions

  1. Using a hand mixer, mix together the cream cheese and goat cheese until well incorporated.
  2. Add in maple syrup, a pinch of salt and a pinch of pepper until well blended.
  3. Stir in chopped chives.
  4. Using a spatula, lay the mixture onto saran wrap and roll into a ball shape, twisting the ends like piece of candy.
  5. Refrigerate for a few hours.
  6. Combine on a plate parsley, pecans, and bacon.
  7. Remove the cheese ball from the saran wrap and roll in the parsley, bacon, and pecan mixture. Serve with crackers or crostini.
