Chop Chop!

My husband thinks I’m obsessed.  If I’m not working, I’m either reading through cookbooks, watching the Food Network, or just brainstorming new recipes on our back porch.  The latest article I read was in Bon Appetit’s August “Simple Issue,” an article highlighting recipes with less than 5 ingredients.  The only caveat was that olive oil, salt, and pepper did not count towards the ingredient total.

To pay homage to Bon Appetit issue, I created my own version of a simple recipe.  While just above the 5 ingredient mark, this is a  simple recipe for a easy weeknight dinners.

Simple dinners mean a great marinade and quick cooking times.  This recipe has both.  To top it off, I use tons of fresh cilantro and mint to really make it pop.  Since I’m lucky enough to still experience warm weather in Dallas, I grilled up these pork chops, but you can easily cook in a saute pan.  I hope you enjoy!

Easy Grilled Pork Chops

Ingredients

  • 1 ½ lbs of thinly sliced pork chops, boneless
  • Marinade:
  • 1 tbs of honey
  • 1 tbs of soy sauce
  • 1 tbs of rice vinegar
  • Topping:
  • 4 radishes, thinly sliced
  • 1 tbs of rice vinegar
  • 2 tsp of olive oil
  • ½ cup chopped cilantro
  • ½ cup of chopped mint
  • Sesame seeds for garnish

Instructions

  1. Combine the marinade ingredients of honey, soy sauce and rice vinegar and whisk to combine.
  2. Add pork chops and marinate for 15 minutes in the refrigerator.
  3. While marinating, combine the radishes with the remaining rice vinegar and olive oil and set aside.
  4. Heat the grill to medium-high heat.
  5. Grill the pork chops around 3-4 minutes on each side, until internal temperature reaches 145 degrees. Remove from grill.
  6. Combine the radishes, cilantro and mint with remaining rice vinegar and olive oil.
  7. Sprinkle with salt and pepper.
  8. Top of the grilled pork chops with the herb salad and garnish with sesame seeds.
